Matcha banana bread with chocolate chips

Ingredients:
- 2 ripe bananas (mashed)
- 1 banana (firm, sliced in half lengthwise — use ½ on top)
- 1 egg
- 1/3 cup neutral oil (coconut or light olive oil works well)
- 1/3 cup brown sugar (plus extra for topping)
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 2–3 tsp ceremonial or culinary matcha (ceremonial gives stronger colour, but culinary gives stronger flavour in baking)
- 1/3 cup dark chocolate chips (adjust to taste)
Steps:
- Preheat oven to 175°C (350°F). Line a loaf pan with baking paper or grease it well.
- In a large bowl, mash the 2 ripe bananas until smooth.
- Add in the egg, oil, brown sugar, and vanilla. Mix until well combined.
- In another bowl, whisk together flour, baking soda, salt, and matcha powder.
- Gently fold the dry into the wet ingredients. Don’t overmix. If it feels too thick, add 1 tbsp of milk.
- Stir in the dark chocolate chips.
- Pour the batter into the prepared loaf pan.
- Gently place ½ banana (sliced lengthwise) on top. Press it slightly into the batter.
- Sprinkle a little brown sugar over the banana for caramelisation.
- Bake for 45–55 mins or until a skewer comes out clean (a few moist crumbs are okay).
- Let cool in the pan for 10–15 mins, then transfer to a wire rack. Slice once cool for clean edges.
