Ingredients:

  • 2 ripe bananas (mashed)
  • 1 banana (firm, sliced in half lengthwise — use ½ on top)
  • 1 egg
  • 1/3 cup neutral oil (coconut or light olive oil works well)
  • 1/3 cup brown sugar (plus extra for topping)
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2–3 tsp ceremonial or culinary matcha (ceremonial gives stronger colour, but culinary gives stronger flavour in baking)
  • 1/3 cup dark chocolate chips (adjust to taste)

Steps:

  1. Preheat oven to 175°C (350°F). Line a loaf pan with baking paper or grease it well.
  2. In a large bowl, mash the 2 ripe bananas until smooth.
  3. Add in the egg, oil, brown sugar, and vanilla. Mix until well combined.
  4. In another bowl, whisk together flour, baking soda, salt, and matcha powder.
  5. Gently fold the dry into the wet ingredients. Don’t overmix. If it feels too thick, add 1 tbsp of milk.
  6. Stir in the dark chocolate chips.
  7. Pour the batter into the prepared loaf pan.
  8. Gently place ½ banana (sliced lengthwise) on top. Press it slightly into the batter.
  9. Sprinkle a little brown sugar over the banana for caramelisation.
  10. Bake for 45–55 mins or until a skewer comes out clean (a few moist crumbs are okay).
  11. Let cool in the pan for 10–15 mins, then transfer to a wire rack. Slice once cool for clean edges.
